I can’t remember the last time that I came out of a weekend feeling truly relaxed. The weather was blah, but I managed to actually get errands done, I took a new pilates class, got my nails done, and indulged in some serious catch-up with my dvr. It’s amazing what a weekend like that can do for the soul! We managed to take advantage of the few hours without rain and drizzle on Sunday for another picnic in central park. We’re really perfecting the art of the picnic basket!
I made goat cheese stuffed figs wrapped in prosciutto. I’m going to let you in on a little secret, if you ever need an easy go to appetizer that is sure to be a crowd pleaser, this is it! So easy, and will have your guests asking what restaurant you got take-out from!
I used green figs-I’ve used the purple ones before and I think they might be a tad sweeter, but the store was out so these did just fine! |
Slice the figs about halfway through and stuff with a slice of goat cheese. Wrap the prosciutto around the fig and place on a foil lined baking sheet. |
Drizzle with balsamic vinegar and place in the oven, heated to 350 degrees, for 10 minutes. |
