The Perfect Valentine’s Day Gift – Mom’s Famous Caramel

During my time at home, mom let me in on her secret salty caramel recipe.  Tied up with a vintage spoon and a red ribbon this would make the best Valentine’s Day gift for a friend or loved one, because who doesn’t love eating caramel straight out of the jar with a spoon?!?!  

The process can be a little temperamental, so having all of your ingredients prepped and ready to go is helpful.  

A quality fleur de sel really makes this caramel shine.

We start by combining the sugar and water.

Let it bubble!  Cook until it turns golden brown, but be careful not to over-stir or the sugar will crystallize.

Then we add the butter, little by little, while stirring with a wooden spoon.
Next comes the salt!
Finally, we remove from heat and stir in the heavy cream.  Careful, it will bubble up and splatter!

Mix until well combined….all silky and smooth.

Pour into jars and let cool, then wrap with a pretty ribbon and a spoon!

Mom’s Famous Fleur de Sel Caramel
Makes two jars
Ingredients:
1 1/2 cup granulated sugar
1.7 ounces water (approx. 3.5 tablespoons)
2 sticks + 1 tablespoon butter, cut into pieces (we have used both salted and non-salted versions)
3/4 teaspoon fleur de sel (if you use salted butter you can omit, or cut back to 1/4 teaspoon)
6.7 ounces heavy cream, warmed
Directions:
Combine sugar and water in medium saucepan and cook over low heat until it turns golden brown.  This step can be very temperamental, do not over-mix or your sugar will crystallize. 
Add butter little by little and continue to stir with a wooden spoon.
Add salt and continue to cook for an additional two minutes.
Remove saucepan from heat and stir in heavy cream.  Mix until well combined.  
Pour into jars and let cool.  Tie up with a pretty bow.  The perfect homemade gift; this will last in the fridge up to three months.
